How to make a green salad?

I like salad, I like a lot a lot of greens, so it´s safe to say I also like green salad. And no, a good green salad doesn't have to be boring at all. This recipe does not recommend to pick a green salad in a plastic bag in your local grocery store. Instead, we consciously opt for more sustainable choices and look for fresh arugula, lettuce mixes at the farmers market shop or just a good old lettuce.

 

Let's get started

Step 1: You start with the base. Those are leafy greens such as arugula, mixed lettuce leaf’s, mustard leaf and radicchio.

Step 2: Add crunchy greens such as green celery and fennel. Although not green, radishes can make an interesting additional ingredient, being nice and crunchy

Step 3: Add steamed greens such as green beans, snow peas, broccoli or some zucchini. Play with texture and flavours. Or just what you have left in your fridge.

Step 4: I use toppings like, avocado, and I’m finishing with fresh herbs, pumpkin seeds, spring onions or hemp seed, you name it.

I usually finish this green salad with a very good quality olive oil, salt and pepper. You can give the salad extra flavour and finish it with a tasty dressing. And so, we can look back to the manuka honey dressing from a few weeks ago, remember? This dressing is a perfect pairing with the leafy green salad. The softness of the leaves with the acidity of the dressing makes this a perfect combo.
